Last weekend while visiting Virginia’s Northern Neck (a peninsula made up of cozy, small towns near Chesapeake Bay) I was re-energized at the Spa at the Tides Inn (more about that later) and got to preview the menu for the resort’s upcoming farm-to-table Cuisine of the Season dinner – a bi-monthly event featuring some of the area’s freshest and most abundant local seafood and vegetables, paired with an incredible selection of regional wines.
Featured this month on Executive Chef TV Flynn’s fall-inspired four-course menu: skillet-seared Virginia Coast sea scallops, ginger snap pumpkin crème brulee and my absolute favorite – Carter Mountain Orchard Creamy Apple Bisque with root vegetables. Our entire table was asking for seconds!

Fall is here, and the oranges, tangelos and grapefruits growing in the orchard at The Ritz-Carlton, Dove Mountain in Marana, Arizona, are prime for the picking. It doesn’t get much fresher than gathering your own fruit and having the staff at the resort’s CORE Kitchen & Wine Bar squeeze you a fresh glass for breakfast. Or, use the fruit to have one of CORE’s signature cocktails made, like the Arizona Greyhound.
(Obviously, fresh juice from the resort is the best way to enjoy the signature Arizona Greyhound, but if you want to make your own version at home, the resort graciously shared the recipe for it with us here!)
The pick-your-own practice is encouraged over at the spa as well, where you can select an herb from the spa garden to be used in your treatment. Choose between mint, lemongrass, rosemary and lavender, then pick out your favorite salts and aromatherapy at the apothecary bar, and the spa’s staff will create your own customized body scrub. We’ve heard of farm-to-table restaurant menus and even farm-to-treatment- table spa menus, but now Maine’s Samoset Resort is adding farm-to-glass menus to their repertoire of locally inspired offerings.
The new handcrafted cocktail menu – available at La Bella Vita restaurant – features drinks like the San Marzano Tomato Bloody Mary and Italian Grapefruit Gimlet that are made from fresh juices (delivered from RIPE Fresh Bar Juices four times a week) and homegrown herbs plucked straight from the bar’s Herb Cocktail Garden.
Another plus? The resort's Spa, which is the perfect place to take in sweeping views of Penobscot Bay before enjoying dinner ... and homegrown cocktails.

We already know that a little bit of dark chocolate every day is good for us, but these chocolates from Chocoveda are even better.
The 100% natural and dairy-free truffles are infused with Indian Ginseng (traditionally known as ashwagandha), an Ayurvedic healing herb that has been proven to relieve stress. We hope that for those of you celebrating St. Patrick's Day today, you remembered to wear your finest green. But if you didn't, we've got the perfect green accessory -- a Four Leaf Clover cocktail recipe courtesy of our friends over at the award-winning (and delish!) Salt restaurant at The Ritz-Carlton, Amelia Island in Florida. Enjoy!
Ingredients:
- 2 oz. Jameson Irish Whiskey
- 2 oz. Sweet and sour mix
- 2 oz. orange juice
- Splash of green Creme de Menthe
Directions:
- Combine Irish Whiskey, sweet and sour mix and orange juice in a cocktail shaker with ice. Shake and strain into martini glass. Sink Creme de Menthe to the bottom of the glass.

One of the many wonderful things about destination spas is the food: It's amazing how spa chefs make healthy meals taste so good. Well, The Hills Health Ranch—a spa vacation resort located in British Columbia that specializes in weight loss, fitness, and hiking—lends some insight with these two recipes you can try at home. (As someone who's gluten-intolerant, I'm especially eager to try the gluten-free Coconut Chick Pea Dessert Bars.) The recipes were developed by owner Juanita Corbett, who owns the destination spa along with her husband, Pat.
Coconut Chick Pea ( Garbanzo beans ) Dessert Bars
Ingredients
4 cups of organic Garbanzo beans drained and well rinsed
3 organic eggs
3 tablespoons of grape seed oil
dash of salt
2 cups of organic unsweetened coconut
1 tablespoon of orange extract
3/4 cup of organic brown sugar or organic granulated sugar
1 ½ cups of white chocolate chips
Directions: Blend beans in food processor until smooth (or mash with potato masher). In a separate bowl combine all other ingredients and mix well. Add beans and mix thoroughly. Pour into an 8 x 8 pan and bake at 350 degrees for 30 to 40 min or until done. It should start coming away from the sides. Allow to cool, then enjoy. Want to add a non-fat whip topping? Watch one of their chefs make it.
Peach Tomato Salsa (zero fat, low calories)
Ingredients
4 cups blanched, peeled and diced ripe organic Roma tomatoes
2 cups firm diced peaches
Zest and juice of 2 limes
2 tablespoons maple syrup
1 or 2 fresh organic Jalapeno peppers, diced with seeds removed (adjust for heat tolerance)
1 medium finely diced red or gold onion
2 cloves garlic minced or pressed
2 teaspoons chopped cilantro
1/2 teaspoon Kosher salt
Fresh ground pepper
Directions: Mix all ingredients together and simmer on medium heat for 10 to 15 minutes. Allow to cool, then serve.

When I have the time, I love to cook—and I'd especially enjoy finding out how to prepare food just like a spa chef. Fortunately, most destination spas offer weekly food demonstrations and cooking tip seminars lead by culinary pros that are included in the price of a stay. (Here's a list of spas that offer cooking classes.) But if you're inner chef wants something a bit more in-depth, the following spas have full-on immersion cooking lessons.
• In Austin, Texas, Lake Austin Spa Resort's weeklong Culinary Experience is offered each month. Their next culinary week, with special guest chefs Sara Moulton and Molly Fowler, takes place June 14-20. (You might also want to visit during one of their Gardening programs if you'd like to start your own garden or take the one you have up a notch.)
• Set in the heart of a six-acre organic farm in Mexico an hour south of San Diego, Rancho La Puerta's La Cocina Que Canta ("The Kitchen That Sings") will have you cooking a full meal with master chefs and then sitting down to enjoy the food afterward. Live in San Diego? Their Saturday's at the Ranch program could be a fun day out.
• In Utah, Red Mountain Spa's Eat Well, Feel Well Culinary School includes 8 hours of cooking instruction. Interested in just a taste? Then try their new offering, Chef for a Day.
Cooking, spa-ing, exercising, enjoying the beauty of the outdoors, relaxing....I think I've found my definition of happiness!
