From Le Spa Eastman à Votre Table
Ingredients
- 1 whole-grain baguette, sliced 1/4-inch thick
- 1 ripe mango, peeled and diced
- 7 oz. cooked lamb, cut into 1/4-inch cubes
- Juice of 1 lemon
- 1 tsp. garlic, finely chopped
- 1 tbsp. fresh mint, finely chopped
- 1½ tbsp. olive oil
- 1 tsp. fresh ginger, grated
- 1 tsp. Dijon mustard
- 1 tbsp. honey
- Salt and pepper to taste
Directions
- Preheat the oven to 400°.
- Place baguette slices on a baking sheet and bake 6 minutes. Remove from oven and cool.
- Combine remaining ingredients in a large bowl and adjust seasoning to taste.
- Top baguette slices with chutney. Serve cool.
Chef's Tip: The lamb can be replaced with duck or chicken.
