Lamb Canapes

From Le Spa Eastman à Votre Table

Ingredients

  • 1 whole-grain baguette, sliced 1/4-inch thick
  • 1 ripe mango, peeled and diced
  • 7 oz. cooked lamb, cut into 1/4-inch cubes
  • Juice of 1 lemon
  • 1 tsp. garlic, finely chopped 
  • 1 tbsp. fresh mint, finely chopped 
  • 1½ tbsp. olive oil
  • 1 tsp. fresh ginger, grated
  • 1 tsp. Dijon mustard
  • 1 tbsp. honey
  • Salt and pepper to taste
Directions
  1. Preheat the oven to 400°.
  2. Place baguette slices on a baking sheet and bake 6 minutes. Remove from oven and cool.
  3. Combine remaining ingredients in a large bowl and adjust seasoning to taste.
  4. Top baguette slices with chutney. Serve cool.

Chef's Tip: The lamb can be replaced with duck or chicken.
