Pomegranate Smoothie
At the recently opened Spa at Sea Island, Wellness Chef Laurie Erickson finds spa guests – adults and kids alike -- responding to a simple, powerful, and delicious energy-boosting idea: The Pomegranate Smoothie.
With its rich red peel and jewel-like seeds, the pomegranate is appealing because it is so rich in antioxidants, making it a favorite "power drink" for adults thinking about spring training and for kids whose parents are seeking healthy alternatives to sugary beverages, says Chef Laurie, who is also a certified fitness instructor and mother of three.

The Pomegranate Smoothie
Ingredients:
1/2 cup freshly squeezed pomegranate juice
1 cup blueberries
1 cup plain nonfat yogurt
2 tablespoons almond butter
8 ice cubes, made from spring water when possible
1 tablespoon ground flax seeds
1/4 teaspoon freshly grated ginger
8 ice cubes, made from spring water if possible
Preparation:
1. To juice the pomegranate, cut it in half and juice using an electric citrus juicer or hand reamer. Pour mixture through a sieve and discard seeds and rind. One large pomegranate usually produces about one-half cup of juice. There are also high-quality already-prepared pomegranate juices now available, including the widely available Pom brand. 2. In a blender combine the pomegranate juice with blueberries, yogurt, almond butter, flax seeds, and freshly grated ginger, and ice. Cover and blend on high speed for 30 seconds. 3.
