4 lemons, juiced and zested 1/2 cup cottage cheese, drained 1 egg, separated 1 tablespoon butter, melted 1 cup dry pancake mix
Remove zest from lemons and chop fine. Juice lemon and mix with cottage cheese, egg yolk, lemon zest, and butter. Stir in pancake mix (do not over mix). Whip egg whites to stiff peaks and fold into batter. Cook on a flat greased griddle until golden.
