Carrot Ginger Soup
2 pounds carrots, chopped 1 potato, peeled, chopped 1 small Vidalia onion, chopped 1 cup fresh pineapple, chopped 1 teaspoons fresh ginger, minced 1 clove garlic, chopped 1 teaspoon fresh lime juice 3 cups Pritikin vegetable stock (available at health food stores) |
| Bring all the ingredients to a boil, lower heat, and simmer until carrots and potatoes are soft. Puree and serve.
Serves 6.
