Apple Carrot Ginger Soup
1 small tart apple, chopped 2 medium carrots, chopped 1 small onion, chopped 1 stalk celery with leaves, chopped 1 tablespoon ginger root, minced 1 teaspoon garlic, minced 1 quart unsalted, canned tomato juice 1 quart water 1/4 teaspoon salt 1/4 teaspoon pepper |
| Simmer all ingredients until the liquid is reduced by one-half. Blend in a food processor. Strain through a sieve. Serve hot or cold.
Serves 5.
